Banana Ice Cream: Dense and thick, the base takes longer than expected to temper. It has a sweet and pronounced but quite natural banana flavor. No ice detected. An enjoyable banana base, which is sometimes challenging to pull off.
Buttery Rum Dulce De Leche Reduction Swirl: A sweet, thick, gooey caramel swirl with a mildly smoky element. I didn’t really detect a rum taste, but not being a fan of alcohol in my ice cream, it wasn’t missed. There were a couple thicker swirls, but mostly thinner ones as well. Unfortunately, the flavor of the thinner caramel got lost against the banana base. But the thicker caramel stood up and contrasted well against the strong banana flavor. For that reason, a few more thick swirls of caramel would’ve improved this pint.
Overall: Coolhaus Bananas Foster is a competent ice cream pint interpretation of a classic dessert. The banana base is rich and creamy, and its flavor strong. Some fruit flavors become icy, but that was not a problem here. I enjoyed the dulce de leche swirl, but I couldn’t really taste the thin ribbons of it against the strong banana base. More thick caramel swirls would’ve helped create a greater flavor contrast in this pint. Even with the caramel, the pint did seem a little plain overall—as if something were missing. Adding in a crunchy mix-in to diversify the texture—maybe almond slivers, pie crust pieces, or vanilla wafer cookies—would take this pint to the next level. Almond slivers might be the best choice as some bananas foster recipes include an optional chopped nut topping. 7/10.
