Raw Honey Ice Cream: The ice cream base is rich and thick. It’s mildly sweet, with a pleasant contrasting sour aftertaste, perhaps from the sourness is from the buttermilk. It has a milky aroma and buttery mouthfeel. If it contains honey, it was so subtle that I could not detect it. At the same time, it’s clearly a premium base with a complex, luxurious taste. Delicious.

House-made Graham Crackers: These are medium sized clumps or balls of ground, homemade graham crackers. There is no sogginess. But it’s not entirely a dry graham cracker either, closer to but not quite dough-like in texture. It’s a nice mix-in. It plays well with the rich base, but there just wasn’t much of it in the pint. Increasing the mix-in ratio would level up the pint and justify the Goldbelly $12 per pint price tag.

Overall: Humphry Slocombe Honey Graham has a delicious premium base with a complex taste. The pint states it has a raw honey base, but no honey flavor was detected. Maybe the honey dissolved into the base and then became too subtle to detect. Honey is one of those ingredients that can be problematic—like caramel—because it can dissolve into the base and lose its unique texture and flavor. If anything, there was some sourness as an aftertaste, likely due to the use of buttermilk. I thoroughly enjoyed that sour note as a contrasting flavor against the dominant sweetness, but I don’t associate honey with sour flavors.

The graham cracker clumps were a delightful mix-in. But there weren’t many of them, as you can see from the pictures. For me, premium priced ice cream needs to be generous with the mix-in ratio. Still, it was a good, enjoyable pint. The individual elements were there for a great pint, but it didn’t quite come together for me as a “honey graham” flavor. More graham crackers and perhaps a swirl of honey might have helped hit the flavors more squarely. 7/10.
