Birthday Cake Flavored Ice Cream: The texture is a bit dense. Letting it temper helps. The texture is smooth and creamy. I’m not sure what really defines a birthday cake flavor. Cake? Extreme sweetness? This base is certainly sweet with perhaps some subtle cake notes.

B’day Crumbs: If anything, these birthday cake crumbs remind me of the baked crumbles that top a coffee cake. It has that sandy, gritty, texture, and sugary sweet flavor. It’s an enjoyable mix-in—not soggy, sometimes even crispy, providing some crunchy texture. I did get one big crumb chunk over a half inch long which was fun. My only complaint would be that there could have been more of the cake crumbs.

B’day Frosting: I think this is more of an icing than a frosting—which is to say of a thinner texture. You can see from the cross section pictures that the white lines of icing keep their shape. They will quickly melt in my mouth. But if I eat the icing quickly, it’s quite crunchy, adding texture. The flavor is powdered sugar. It adds a punch of sweetness to the pint since; it’s mostly sugar and there’s plenty throughout the pint.

Overall: Milk Bar’s Birthday Cake is a sweet take on the classic flavor. The sweet base has a somewhat subdued cakey vibe. The cake crumbs are enjoyable, but smallish and not too plentiful. I would’ve preferred a generous amount of chunks. The icing is a unique mix-in that I haven’t seen before in a pint. It’s crunchy and adds texture if you don’t let it melt in your mouth. The icing does make the pint extremely sweet. Generally, it’s enjoyable, indulgent pint, but if you don’t have a sweet tooth you may find it too rich. 8/10.
