Proper Banana Two Pound Cake and Cream Ice Cream Review

Review

Disclaimer: Proper Ice Cream sent me a complimentary box of six pints to review. Thanks, Proper! While the free pints provide me with the opportunity for this review, Proper Ice Cream has no control over the opinions expressed in my review.

The pints reviewed are available from Goldbelly.

Flavor Description: This Banana Two-Pound Cake and Cream is made with creamy fresh banana ice cream swirled with house-made vanilla cream and rich buttery two-pound cake. Proper Ice Cream calls it two-pound cake because they double up on butter and sugars resulting in a very dense and flavorful pound cake.

Banana Ice Cream and Vanilla Cream Swirl: Opening the pint, I see at least an inch of empty space at the top. It’s not a problem I’ve noticed with any of the other five pints, so I assume it’s a manufacturing error.

There’s some white foam at the top of the pint. “The house-made vanilla cream” mentioned in the pint description? It has more of a meringue texture, though it is very sweet.

The base has a strong banana flavor but a sour aftertaste, at least with the first couple tastes. It’s a very sweet base. The biggest problem: it’s a bit icy. I’m assuming this is caused by the banana in the base—most fruists can add moisture, cause ice crystals to form. It did help to let it temper. It seemed to melt quickly and have a light texture.

Two-Pound Cake Chunks: Large cubes of pound cake at least 1/2 inch across. In my half pint, I got 6 – 8 pieces—half full-sized cubes, and half smaller, broken chunks. The pound cake was soggy making it difficult to discern their flavor; they just tasted like the banana ice cream base that had soaked into them.

Overall: Proper Ice Cream’s Banana Two-Pound Cake and Cream sounds like a flavor I could really enjoy—banana ice cream with vanilla cream and rich pound cake chunks. But there were multiple serious problems with this pint. An inch of ice cream was missing from the top, as you can see from the pictures.

The ice cream base itself while boldly flavored with banana was too icy to be enjoyable. Finally, the pound cake was soggy. Perhaps this pint melted and refroze somehow at Goldbelly headquarters. It didn’t taste up to the standards set by the other five Proper pints I’ve sampled. I’m curious if the problems I identified are typical of this particular flavor or if this pint was defective. 6/10.

Back blurb

As many artisan crafts begin, Proper Ice Cream started in our home kitchen. Many trips to Italy and “foodie” cities such as New York, San Francisco and Chicago left us missing such amazing textures and flavors until our next visit. Experimenting with trying to recreate these experiences was all it took.

There is real science to crafting an ultra creamy ice cream that uses entirely natural ingredients, and we’ve cracked it. We even use 20% less sugars than standard recipes!
Less sugar and zero additives results in custard-like mouthfeel that doesn’t require a drink of water afterward.

It’s simply proper, the way it should be.
