Butterscotch Ice Cream: A rich, creamy, sweet, mildly butterscotch base. I may be the exception here but I enjoy a bolder butterscotch with more bite to it. Also, after sampling several Proper pints, I must note that Proper doesn’t have quite as much of a fatty or buttery mouthfeel as some other premium brands. It’s not a criticism. Some don’t like that sensation of fat coating the tongue that comes from very fatty ice cream—they claim it interferes with tasting the flavors in the pint—and the Proper Ice Cream website suggests the owner is one such ice cream consumer.

To be clear, this Proper butterscotch base is pleasant and refreshing, premium quality. I’m not certain what the butterfat ratio is in this pint, but I would guess it’s less than some other brands that use lots of egg yolks in their bases. It’s a flavor choice, and a valid one. To each his own.

Cocoa Brownies: Big honking cubes of brownies, at least 1/2 inch across or larger. These are dry brownies, not at all soggy. A more cakey brownie style, not fudgy or crispy, perhaps from the inclusion of dry cocoa in the brownies which is noted in the name of this pint. Cocoa tends to draw moisture from brownies. They have a good chocolatey brownie flavor. The chunk size is nice and big, but there could have been more brownie chunks—especially given this is the only mix-in for this pint.

Overall: Proper Ice Cream’s Butterscotch Cocoa Brownie has a killer combo—butterscotch ice cream and brownies. But I would have preferred a bolder butterscotch base. I like when butterscotch slaps me in the face and says “I’m not caramel!” Instead, this was a more gentle butterscotch ice cream that held my hand and talked about existentialist French literature. Interesting, but not what I had in mind. Also: an actual butterscotch swirl would have been appreciated—really upped the butterscotch element. The swirl could’ve been included in the base or swirled into the brownie chunks. Either way, true decadence would’ve been achieved.

The brownie pieces were biggies, which I appreciate—you know I love the big, generous mix-ins. But because of the use of cocoa, these brownies leaned towards dry and cakey—they weren’t the fudgy, crispy-edged brownies that I frankly love more.

It’s a good quality pint, enjoyable, if not super decadent—but decadent is what the words “butterscotch brownie” will always mean to me. So not exactly what I was anticipating. 7.5/10.
