Sweet Cream Base: A sweet and creamy base, lighter, less fatty, than the bases of some other premium brands. It melts quickly. Sometimes it tastes slightly icy. No, we’re not talking big chunks of ice, just a hint of frost. It’s not a problem, but a conscious choice to keep the butterfat level of the ice cream in check—to make an ice cream that is more refreshing. It works well as a blank canvas for the mix-ins.

Homemade Candied Honeycomb Pieces Covered in Rich Dark Chocolate: The honeycomb candy melted, slipped from its chocolate shell, and settled towards the bottom of the pint in a large syrupy pool—which isn’t necessarily bad, as I enjoyed that caramel-flavored goodness. However, it doesn’t seem like what was intended because the description mentions homemade candied honeycomb covered in chocolate, not caramel syrup pools.

It wasn’t a problem for me because I cut the pint in half and knew there was this concentration of caramel syrup at the pint bottom that I could portion out as I ate the pint. But someone eating from the top of the pint down would’ve instead discovered to their great surprise a big pool of syrup at the bottom of their pint with little or no ice cream left to mix it with—probably not the ice cream maker’s intent with this flavor.

Honeycomb candy may be one of those mix-ins that works in the ice cream shop, but in a pint, it has too much time to melt. Freezing the honeycomb first before adding it to the pint may—or may not—solve the problem. The honeycomb may always melt when exposed to the dairy in the base, so that the only solution to prevent such melting is sealing the honeycomb with a chocolate coating.

The melted honeycomb did have a pleasant dark caramel flavor, but texturally was not quite as thick as caramel, more of a syrup really. There was enough of the melted candy syrup to flavor the entire base. Enough to have some on every spoon if I wanted it. It added a lot of sweetness to the base.

There was a moderate amount of chocolate left behind higher up in the base. Small, gnarled chocolate pieces, some with imprints inside where the honeycomb candy used to be before it melted. It was a dark chocolate—the ingredients list shows 100% chocolate—and it worked well as a contrast to the sweet base and honeycomb syrup.

Overall: Proper Ice Cream’s Chocolate-Covered Honeycomb worked for me because I have a serious sweet tooth. It is supposed to consist of a sweet cream base with chocolate-covered honeycomb candy pieces. But I don’t believe the pint I received is what was intended by the ice cream maker. The honeycomb candy pieces had entirely melted from their candy shells and settled in a giant liquid caramel syrup pool on the bottom of the pint—as you can see from the cross section pictures.

Because I cut the pint in half, I had the opportunity to portion out the caramel syrup with the base and gnarled chocolate chunks. But someone eating down from the top of the pint would’ve had a rude awakening when they reached the giant caramel syrup pool at the bottom with no ice cream left with which to mix it. I enjoyed it, the decadent sweetness of the generous amount of dark caramel syrup, but I doubt the pint I received was what was intended by the ice cream maker. 7/10.
