Flavor Description: Blueberry Muffin Ice Cream is made with a fresh sweet cream base mixed with Proper Ice Cream’s housemade blueberry muffins. They then add a rich, slow-cooked pure blueberry compote and ribbon throughout for a taste of summer.
Sweet Cream Base: The base is sweet and creamy. It improves with tempering. This may be the effect of the blueberries on the pint adding some moisture to the base; I’m not sure. I’ll have a better sense of what to expect from Proper’s ice cream base as I try the other flavors I received.
The pint’s back blurb suggests their ice cream recipe includes “20% less sugars than standard recipes.” I can’t taste the missing sugar—it’s sweet enough. And I know the base is actually just sweet cream, but I’m getting a blueberry flavor from the base, perhaps from the plentiful blueberry muffin bits and blueberry compote swirl.
Housemade Blueberry Muffins Pieces: There are blueberry muffin pieces everywhere throughout the base—some on every spoon. The muffin pieces do indeed have the texture and flavor of blueberry muffins—impressive because many brands use much more generic, less effective mix-ins. The muffins are solid, not soggy, and fairly sweet. There’s a variety of sizes—from numerous tiny bits to a few crazy big clumps an inch across. Just the right amount of this mix-in, too–which is to say, the mix-in ratio is generous.
Slow-Cooked Blueberry Compote Ribbon: It’s a very sweet, intensely flavorful blueberry jam swirl, and it helps to reinforce and drive home the blueberry muffin flavor. It’s a thin ribbon, though, and there aren’t any big pools of it. I can’t really isolate it on my spoon to taste it separately from the base, but it is widespread enough throughout the pint to flavor the base quite effectively.
Overall: Proper Ice Cream’s Blueberry Muffin absolutely nails the blueberry muffin flavor profile. It’s composed of a sweet cream base, a blueberry compote swirl, and blueberry muffin pieces. The muffin pieces are exceptional quality, flavorful, not soggy, and plentiful. Lots of little muffin bits really add flavor and texture to the pint. And there are some biggie chunks of muffin in there that are a nice surprise. The blueberry compote, while generally thin, is intensely flavorful and really drives home the blueberry muffin theme. The result is a unique, refreshing, summery treat. Recommended. 8/10.
