Flavor Description: A Key lime ice cream base is swirled with Italian Meringue and pieces of homemade pie crust.
Key Lime Ice Cream: The base is rich, creamy, and more dense than any other Proper brand flavor I’ve tried so far. It’s lime flavored, but not overly bold—a good balance between the citrus and milky flavors. It’s not icy—always a concern with any fruit-flavored ice cream. Summery and refreshing.
Italian Meringue Swirl: There’s a layer of the meringue swirled on top as well as throughout. Thick, foamy, and sweet, with an almost marshmallow texture. A pleasant pop of sweetness and a nice texture change.
Homemade Pie Crust Pieces: The graham cracker pie crust pieces are fairly large and generously distributed throughout. They’re the standout element of this pint—not at all soggy and with a bold and buttery toasted graham flavor. They had the flavor and texture of a real graham cracker pie crust—a nice surprise because some brands use more generic mix-ins for pie crust.
Overall: Proper Key Lime Pie is the best of the six pints I’ve tried. Everything just comes together. The base is a strong but not overly bold Key lime that’s never icy. The meringue swirl adds an extra hit of sweetness to cushion the tartness somewhat. And the buttery toasted graham cracker pie crust chunks are delicious—big in size and flavor, and fairly generous in amount. A summery Florida flavor. Recommended. 9/10.

As many artisan crafts begin, Proper Ice Cream started in our home kitchen. Many trips to Italy and “foodie” cities such as New York, San Francisco and Chicago left us missing such amazing textures and flavors until our next visit. Experimenting with trying to recreate these experiences was all it took.
There is real science to crafting an ultra creamy ice cream that uses entirely natural ingredients, and we’ve cracked it. We even use 20% less sugars than standard recipes!
Less sugar and zero additives results in custard-like mouthfeel that doesn’t require a drink of water afterward.It’s simply proper, the way it should be.
