Nota bene: This ice cream pint was missing about a ½ inch from the pint top. And from the cross-section pictures, you can see that most of the mix-ins sunk to the bottom of the pint. I don’t know if this is an intentional cost-savings measure, a production defect, or a melting-in-transit issue. But it doesn’t look right—it doesn’t look appetizing—and I’m not used to seeing this issue from B&J, which is usually consistent in maintaining their premium pint quality. To be fair, the problem wasn’t as bad as my pint of B&J’s Strawberry Topped Tart where I felt like mix-ins were simply missing. But I haven’t had great luck with B&J’s Topped pints so far.

Brown Butter Bourbon Ice Cream: A creamy, rich, brown butter base. A hefty dairy note, probably from the brown butter. Also: hints of bourbon, not strong enough to offend if you are sensitive to alcohol flavors in your ice cream. The bourbon works as a contrast to the sweet base. A complex flavor that I really liked.

Blondie Pieces: They lack the texture of baked blondie pieces. Instead, it’s closer to a blondie batter swirl. Soft, not cakey nor crispy. A generic sweet flavor, but you could argue that’s what a blondie has. I would have preferred chunks of cooked blondies. Still, it’s pleasant blondie batter, and adds some texture and flavor. As I mentioned before, all the blondie mix-ins were on the pint bottom. Not too plentiful either—maybe 4 – 5 in my half pint serving.

Whiskey Caramel Swirls: I really dug around to isolate some of this caramel—to really taste it separately from the other flavors of the pint. I found a couple small bits of the caramel swirl, but there wasn’t much flavor—no whiskey, just more sweetness. A nice creamy caramel flavor and a thick syrupy texture. I just wish there had been some more of it. A generous serving of such high quality caramel would’ve helped bring the other pint flavors together.

White Chocolatey Ganache Topping and White Fudge Chunks: A simple sweet ganache that melts in the mouth easily, without much of a bite of white chocolate flavor. The white chocolate chunks are about 1/4 inch in diameter, take longer to melt, and have more white chocolate flavor. The chunks are not as sweet as the ganache. I’m not sure doubling up on the white chocolate is adding much—a contrasting flavor might have been more interesting.

Overall: Ben & Jerry’s “Topped” Whiskey Biz has all the elements of a great pint—a rich complex brown butter bourbon base and decadent mix-ins. The base has nice dairy notes and the perfect subtle taste of bourbon. But something went wrong with the pint I received. Most mix-ins had sunk to the bottom, and half an inch was missing from the top. The blondie pieces weren’t cakey or crispy—they were closer to a blondie batter swirl—sweet and enjoyable, but not what as I was expecting. Maybe this pint melted to some extent during transport and that allowed the base to soften the blondies into a batter.

The caramel swirl was rich, but lacked the promised whisky flavor, and there frankly was very little of it. I enjoyed the white chocolate chunks on the top of the pint—their bite of white chocolate flavor was appreciated. But the white chocolate ganache itself was just sweet, lacking that same bite. I do feel like this pint has a great combination of flavors and textures that work well together, and I would have given it a higher score if it weren’t for the production issues. 7/10.
