Ice Cream Review Talenti Bourbon Fudge Brownie

Review

This ice cream pint is from the Talenti Gelato Pairings line that has two different bases side by side—in this pint, chocolate gelato and oak-aged bourbon gelato, with brownie pieces as a mix-in.

Chocolate Gelato: A good chocolate gelato—similar to Talenti’s Salted Chocolate Churro pint, which I also enjoyed. It was creamy and not too dense. The mouthfeel was clean, not overly fatty. The taste was sweet, but not cloying. A distinct, complex chocolate flavor—superior to many mild chocolate ice cream bases I’ve tried recently.

Bourbon Gelato: I’m frankly not a fan of alcohol flavors in my ice cream. Initially there was just a hint of it, but then I got a second hit of bourbon flavor in the aftertaste. The texture was creamy, light, and clean like the chocolate half. The ingredients include whisky and “oakwood extract.” I don’t know if the extract qualifies as natural or artificial. And I’m not a bourbon drinker, so I can’t tell you how accurate the flavor was. After a couple tastes, the bourbon flavor fades to the background, though I still got an alcohol aftertaste sometimes.

Brownie Pieces: The brownie pieces were small- to medium-sized nuggets. The flavor was very chocolatey, almost a cocoa flavor, which is good. However the texture was hard and dense. It didn’t seem like a typical brownie texture which would have been much more enjoyable. It was more like baked chocolate nuggets. The brownie pieces were only in the chocolate gelato half of the pint. I would say there were not a lot of brownie pieces, though there were more brownie pieces than churro mix-ins in the Talenti Salted Chocolate Churro pint. Talenti tends to be stingy with the mix-ins—some would argue “restrained” or “subtle.” Most Talenti pints could be improved simply by increasing the mix-in ratio.

Overall: Talenti describes Bourbon Fudge Brownie as a “pairing of Belgian chocolate gelato and oak-aged bourbon gelato with brownie pieces.”

I’m not really a bourbon aficionado, but the alcohol flavor in the bourbon gelato was mild enough, hitting mostly on the aftertaste, that I didn’t mind it much. And the chocolate gelato was a nice countering flavor, strong and somewhat complex; bourbon and chocolate play well together. The gelato bases themselves were quite enjoyable.

For some reason, the brownie bits were only in the chocolate gelato half of the pint. I found the texture of the brownie pieces to be too hard and dense, though the brownie flavor was generally pleasant.

Talenti tends to be stingy with the mix-ins. Some would argue Talenti is going for a subtle or restrained approach to mix-ins. But my take is that most Talenti pints would be improved simply by increasing the mix-in ratio. And that’s the main problem with the brownie mix-in here—there’s just not enough to call this a premium pint. A higher quality, softer or fudgier brownie mix-in—and a more generous mix-in ratio—would improve this pint. 8/10.
